The origins of American barbecue date back to colonial times and first recorded in 1972 but Pete and Lauren Stephenson have brought it into a new era with their Mount Cotton based restaurant.

After owning licensed cafes for fifteen years Billy’s was started in the Stephenson’s backyard as a hobby which grew from there to the point they needed a permanent home, a mecca for meat.

Opened in April 2018 the meals here are cooked to perfection and like a newborn baby delivered with love.

Partnered with a corn bread that is sweet and crumbly while also hearty enough to make the perfect sidekick to your meat of choice.

The sauce they have dripping on their ribs is the arch nemesis of white apparel but the saviour of any carnivore’s mouth. The moment it hits your tastebuds they sing in a gospel choir of pleasure and satisfaction.

The restaurants clientele is fiercely loyal knowing what they will be fed at Billy’s is food of a flavour far and few between.

Starting with the smoked beef brisket so tender it will fall apart with the softest touch served with collar butt pulled pork, a pair of jalapeño and cheddar sausage with the right level of kick needed, southern fried or grilled chicken, pork ribs that you will savour to the last scrap, coleslaw, hot chips, pickles, two milk bun dinner rolls and two sweet corn breads that perfectly round out the meal.
